Kuymak (Mıhlama) with Maize Flour


» 2 spoonful butter

» 2.5 tablespoons of Dr. Akyol maize flour

» 1 glass of water or milk

» 1 cup of diced Black Sea cheddar (less salted cheddar, string or cheddar cheese too)


Melt the butter. It is recommended to cook with a copper pan on low heat. Add the maize flour before it gets too brown. Start roasting. The amount of butter can be increased optionally. Stir constantly. Stir until the maize flour turns colour. When the flour is roasted, add 1 glass of water and mix until it gets a thick consistency. Instead of water, there is also milk. It can be half milk half water. Then add the cheddar and stir constantly until the cheddar melts. If there is no Black Sea cheddar, it can be low salt çecil cheese, string cheese or cheddar cheese. Serve immediately hot.

Halva with Maize Flour


» 2 cups of Dr. Akyol maize flour

» 7-8 tablespoons of oil

» 2 and a half glasses of water

» 1 and a half cups of sugar

» 1 packet of vanilla

» Half a cup of peanuts and hazelnuts


Oil, peanut and maize flour are taken into a Teflon saucepan. On the stove at medium heat, stirring constantly, for about 15 minutes until the smell of flour comes out. Roasted for a minute. On the other hand, it is melted by mixing water, vanilla and sugar. Slowly pour over the roasted flour and mix quickly. Be careful here, too much steam will come out, don't burn your hand completely. Stir and cook until the water evaporates. The cooked halva is taken from the stove and the lid of the pot is closed. It is served after resting for about 10 minutes.
